Sometimes I don’t understand what the point of all this is. Honestly, anyone can write whatever they want to impress others and seem competitive. But you can only be accepted professionally if you present yourself as you truly are – and that often isn’t allowed, because people will look at you strangely and ignore you if you’re not “interesting”.

To be competitive on the job market – which in my opinion barely even exists today – you have to deal with the fact that many workplaces are run by people who are not properly educated or simply don’t love their job. Unfortunately, those who are the opposite, but aren’t “suitable”, often get shut down.

We ask ourselves whether restaurants need skilled people. In real life, often they don’t – because they only want good numbers and the lowest possible costs. Today everything is ordered in, and hardly anyone makes anything homemade – from dough to desserts – even though that’s exactly what gives food its value and soul. It’s faster, it’s standardized – but in the long run, it makes no sense.

I haven’t bought store‑bought bread in years. And I can knead any kind of bread you want, whenever you want. I’m still learning, education never ends – I’m exploring myself. While some people work in restaurants and see them as a private ATM from which they take their salary at the end of the month, I believe that’s not the right path.

The days of store‑bought pasta or bread are over. Everything has become more expensive, and to justify the price, you have to roll up your sleeves and make a lot of things yourself. Only then do you build yourself, the people around you, and the restaurant or company you work in.

I would rather say: “Sorry, we’re out of that” than make something that makes no sense, just so it’s ready immediately. That leads nowhere.

The problem is the suppression of people who have desire and drive. They’re creative, but they’re constantly being shut down and suffocated.

In my case, that’s no longer an option.

They say: “He drinks, he has a problem.” To everyone I’ve worked for, I can say just one thing – I don’t have a problem. And that’s no longer an option.

What doesn’t kill you makes you stronger. I’m grateful for these emotions because they push me toward a new journey. I just hope that this time I won’t end up in a ravine, but where I truly belong.
